  1. First cut the lemon grass, the capsicum, the mushrooms, the ginger, the spring onions and the coriander into small fitting pieces. Also start to boil the rice in some salted water for about 12 minutes.
  2. Secondly peel the potato and cut it into pieces. Sweat the spring onions for a couple of minutes. Afterwards add the chicken, the ginger and the lemon grass for another 10 minutes until the chicken gets the right color.
  3. Now add the potatoes, the mushrooms, the capsicum and the veggie stock. After everything fried for about 10 minutes add the milk, the coconut milk, the pineapple, the curry paste and the fish sauce.
